Ngũ Sắc cake is not just a gift from Huế; it also carries the imprint of time and royal court culture. In the past, it was an indispensable treat for the nobility, thanks to its refinement in both appearance and flavour.
The cake is made from mung bean flour and sugar, giving it a delicate sweetness and a rich, nutty taste that never feels heavy. What makes it special is the wrapping: five strips of colourful paper are carefully folded into a small box that looks like a tiny pillow. Perhaps that is why locals also call it by the endearing name "bánh gối" (pillow cake).
Beyond its beauty, Ngũ Sắc cake symbolises luck and prosperity, and is often enjoyed during holidays and Tết, used as offerings, or given as a meaningful gift.
