Bánh Ngũ Sắc (Five-Colour Cake) originates from Huế and is named after its multicoloured paper wrapping. Locals affectionately call it Bánh Gối (Pillow Cake) because of its small shape, which resembles a cute little pillow.
Originally, the cake was made from glutinous rice grains, but as ingredients changed, roasted glutinous rice flour gradually became the substitute, while still keeping the fragrant, chewy texture and essence of the traditional treat. Notably, there is one important rule that artisans always follow: the outer shell and the filling must be made of the same thing. As Mrs. Mai Thị Trà once emphasised: "Never, ever do the outside and the inside of the cake fail to match."
