A rustic dish full of Huế character, often chosen by locals for breakfast or a late-night meal.
The bánh canh noodles are made from hand-kneaded rice flour and cut by hand, which gives them their own soft texture and fragrance. The broth is simmered from crab for a clean, sweet taste, with a little rice flour added to thicken it slightly. When serving, the vendor skilfully ladles in noodles, broth, crab cake and quail eggs, then sprinkles on spring onions, herbs, crispy pork cracklings, pepper and chili. The result is a rich, warming bowl.
